Laurent and Fabien Caussé are the 8th generation of winegrowers on the family estate. They cultivate 50 hectares of vines and create a diversity of five ranges of wines produced in accordance with tradition.
Legend has it that the Sarrabelle spring, which gushes out near the Medieval Castle of Montaigut, was the place of the beautiful Yolande's romantic rendezvous. Its name comes from the Occitan "sarro-bello" which can be translated as: to hold one's love in one's arms. The castle, destroyed during the Albigensian Crusade, is preserved in its lower parts and above, the Chapel of Montaigut is erected.
Today, Laurent and Fabien Caussé are the 8th generation of winegrowers on the family estate. They cultivate 50 hectares of vines and create a diversity of five ranges of wines produced in accordance with tradition.
The estate's approach to amphorae is not to use them as a transport container, but to use the natural property of the permeability of fired clay during the aging of the wine. Micro-oxidation is already widely used in oak barrel aging. It rounds out the tannins and gives complexity to the great vintages. Due to its shape, the nature of the blend of its soils, the cooking temperature, the behavior of the aging amphora towards the wine is different. Due to its clay nature, the amphora is neutral in taste and will participate in the powerful expression of the subtle aromas of the wine, the slight drop in acidity as well as the development of a richer and broader structure.
The estate is made up of 4 white grape varieties and 6 red grape varieties.
In the white grape varieties, we cultivate the traditional Gaillac grape varieties: len-de-l'el or (Loin de l'œil), Mauzac and Muscadelle as well as Chardonnay which is not a conventional grape variety of the region.
The 6 red grape varieties cultivated are: Braucol, also called Fer Servadou, Duras, Syrah and in complementary grape varieties: Merlot, Cabernet Sauvignon and Gamay.
The estate, which covers 50 hectares, is located in Lisle sur Tarn, approximately 30 minutes from Toulouse and 15 minutes from Albi (exit no. 8 – A68).
