Tasting cellar, Producer
in Cahuzac-sur-Vere

Domaine Pech Del Cel

The estate has existed since the end of the 2011th century, initially as a mixed crop, vines and cereals where Marcellin, Léo and Claude succeeded one another. In XNUMX, I decided to invest in it in addition to my salaried activity.
The estate's vines now extend over 4 hectares. A plot of 45-year-old Syrah for red and two plots of Len de l'El and Sauvignon for whites were initially present. Braucol and Duras have been added since 2015 for the production of my red wines (complicated English grafting technique passed down by my father, already used for Braucol and Duras). An additional 1,20 hectares of indigenous grape varieties were grafted in place, partly in 2023 (Duras and Mauzac rose), with work ending in 2024 with Verdanel and Syrah (cleft and eye grafting methods). The transition to Organic Agriculture began in 2016 and the 2020 vintage was the first to be certified. In the cellar as in the vineyard, the Ethical charter of the Terres de Gaillac association is applied: organic farming, manual harvesting, indigenous yeasts and minimal inputs.
As early as 2012, the question of cultivation practice made me rule out any chemical input in the vineyard. Especially since old soil working equipment, some from my great-grandfather and still effective, was available! The same idea only came to the cellar later in 2013. Meetings with other winegrowers from Terres de Gaillac, thinking about the pleasure of natural wine and its logic of working the vineyard, thus led me towards fermentations with indigenous yeasts, the elimination of fining, the reduction or elimination of sulphites.
Beyond these technical aspects, the important thing is to be able to [re]connect with the land, to be able to express oneself through a wine, to succeed or accept making mistakes, but also and above all to create a bond: the one that can exist between a producer and a consumer, between friends, winegrower neighbors, and within one's family.
Since the end of 2023, my wife has joined the adventure.
We are pleased to welcome the public on an ad hoc basis or during a stay in a gîte (up to 11 people) or guest room. We organize tastings of our vintages at the estate, by appointment only.
