Since 1982, the vines have been cultivated using organic farming methods. The range of Gaillac grape varieties is used. The grapes are harvested by hand and produce wines that are naturally rich in the particularity of the terroir and the vintage.
The Domaine de Cantalauze comprises 9 hectares of vines surrounded by woods, natural meadows, hales and organic crops, located on the Cordais plateau, a small limestone causse backed by the Grésigne forest massif. Since 1982, biodiversity, soil life and tailor-made vineyard management have been developed there: they experiment with global and ecological organic farming. Cantalauze is also a human adventure with its winegrowers, its grape harvesters who harvest each vintage by hand, its drinkers who meet there all year round.
The daily thought and attention paid to the vine and its ecosystem allow to give birth by spontaneous fermentation due to the only indigenous yeasts to wines naturally rich in all the particularity of the terroir and the vintage. The diversity of the grape varieties cultivated on the estate and the different methods of vinification and breeding decline the richness of the Gaillac heritage.
All year round we welcome you to our wine cellar built into the limestone rock and with century-old walls made of the same rock, which offers very pleasant coolness in summer.
We offer tours of our vines to explain how we cultivate them as well as the winery which brings together in one place the different winemaking workshops: from the reception of the harvest to the amphorae, via the vat room or the disgorging workshop.
