Amarens, Frausseilles, Souel are communes of the Cordais plateau separated by small valleys with steep slopes from which the freshness and dew of the Cérou valley rise. Our vines located on this slope benefit from the morning mists in the middle of August. This climate is very favorable for the production of white wines.
On the other side of the D922, on the Vère valley slope, the other part of Souel and the commune of Donnazac are more suitable for the production of red wines thanks to their exposure and their more clayey terroirs. Souel is one of the most calcareous terroirs of the Gaillac appellation, our clayey-limestone and rocky soils give our wines a feeling of freshness and a marked typicality even in sunny years.
We pay a lot of attention to the maintenance of our vines in order to preserve their balance, an essential element in the search for optimal maturity of the grapes. Our choices are guided by daily and rigorous observations, in the vineyard as well as in the cellar. We favor manual work, from pruning to the harvest. Imagining and composing wines without artifice, which are the reflection of our terroirs, has always defined our line of conduct.
